bakingThis week, for my Thursday Round-up post, I thought I’d post some recipes that we’ve just tried … all found on the ‘net … which have proved to be so delicious I want to make sure I don’t lose them (and I thought y’all would enjoy trying them, too!).

  • Crispy Broccoli — this is a must-try recipe. Honestly, you won’t believe how good the broccoli tastes roasted in the oven with just a bit of olive oil and salt. I changed mine up slightly by mixing half olive oil/half melted butter, Tony Chachere’s Creole seasoning (in place of the salt), and about 2 tsp minced garlic. If you put all that in a plastic, sealable gallon bag and then add the broccoli bits (I included the stems chopped thin) … shake up to mix all together … and then spread on the pan … all the ingredients combine nicely and life is easy. 30-40 minutes later my kids couldn’t believe how good this tasted (and a couple of them don’t even LIKE broccoli).
  • Crispy, Oven Roasted Potatoes. I couldn’t find a good online source for this recipe that I saw on Facebook. It’s pretty basic but makes up oh, so amazing. My older son who doesn’t like potatoes, gave this the thumbs-up. I saw a suggestion somewhere that said if you put a wooden spoon behind the potato as you make the slices, you won’t cut all the way thru. Genius!

  • Cinnamon-Roll Cake … it’s hard to imagine that a cake with no yeast could taste like fresh cinnamon rolls; but, trust me, this one does. Follow the directions exactly: if you mix the melted butter in with all the ingredients (instead of following the “rules” and drizzling in after all else is stirred together) it still tastes good but the consistency is different. We’ve made this twice in the last two weeks and the kids just gobble it up.

Here are a couple that popped up that I haven’t tried yet … but they sound so good, I’m sure they’re in my culinary future …

  • 3-Ingredient Energy Bars … I have the ingredients … and folks tell me these get gobbled up … so they’ll be made today (if I don’t run out of time) or latest, tomorrow. I’m going to try cranberry/pecan/chocolate-chip ones first! Note: the recipe mentions that you HAVE to use dates as the binder … dh is thrilled as he loves dates and I never buy them (so I got TWO packs when I was at the store Monday).
  • Miraculous Thyroid Drink … The combination of cranberry and spices just sounds so good … and all the ingredients are considered “super foods” so it’s worth a shot, yes?
  • Greek Yogurt Fudgey Pops … greek yogurt, dark chocolate … need I say more?
