Since we already had the grill on for the batter-fried summer squash (we never fry IN the house … the smell of last night’s frying is nauseating and there is much less clean-up if done on the grill … especially since DH is an amazing griller and keeps everything uber neat!), we went ahead and tried making grilled avocado … a recipe I’d seen on Facebook or Pinterest or somewhere.

Here’s the result.

This basically makes single-serving guacamole and it is an amazing taste-sensation. AND, it’s easy-schmeasy. Here’s how we did it:

My dh isn’t keen on Southwest/Mexican food … he opted for olive oil and garlic salt sprinkled on the avocado before grilling.
