Now that the weather is finally cooler (at least for part of the day), my mind is turning more and more to baking … and today was such a turn. After hearing the three offspring debate the best cookie for mom to make, I decided to make an “adult cookie” — no liquor or scandal or anything … just one that didn’t induce diabetic comas!
And I stumbled across a pip!
Martha Stewart’s Mocha Shortbread is a perfect cookie for adults … especially those of us who like coffee, bittersweet chocolate and shortbread all rolled into one. You could always make it a little sweeter by adding chocolate chips to the batter or melting semi-sweet chocolate chips atop the shortbread during it’s final couple of minutes of baking time.
Here’s the recipe from Martha’s site:
- 8 tbls (1 cube) butter, softened
- 1/3 c powdered sugar
- 1/2 c + 3tbl unbleached, all-purpose flour
- 1/2 c cocoa
- 1 tbls ground coffee beans (I used our Sumatra coffee)
Preheat oven to 350
Cream butter and sugar
Sift flour, cocoa and coffee to mix and then add to butter/sugar mixture.
Stir until well-combined.
Press into an 8″ or 9″ pyrex pan and bake until firm (about 20-25 minutes). Remove shortbread from oven and let cool for 5min. Cut into slices and then allow to cool completely.
